WHAT IS A SPECIAL COFFEE?

In this wonderful world of coffee in which I have had the privilege of participating throughout my life, there are many frequent questions that come to me, which I want to continue answering in this blog, so today I want to talk about what makes a coffee defined special or specialty according to my experience.

First of all, we must know that the world of specialty coffee offers a wide variety of flavors, aromas, and nuances that captivate coffee lovers around the world, and to understand the origin of these components, I want to tell you that a specialty coffee is identified by three aspects which are: its process on the farm, cup quality and unique origin.

Farm process: in Colombia, our process is artisanal, we collect the beans in their perfect state of maturation, then they are pulped, they begin their fermentation process, they are washed with clean water and finally they are taken to the drying patios.

It is hard work that requires the greatest dedication to achieve the development of extraordinary flavor notes.

Cup quality: there is a cupping protocol to validate the quality of the coffee, it is an international language where coffee is rated between 0 to 100 points. Subsequently, it is analyzed as follows:

Single origin: a single origin coffee comes from a specific geographical location, in a specialty coffee we can find on the label the name of the country, region, city, name of the farm (place of production) and in some cases the name of the producer.
